Don’t be alarmed when you bite into that medium-well burger and it’s still pink inside!
When cooking in sousvide bags, the meat is under vacuum – that means without air. The color change in meat, is due to oxidation of the hemoglobin in the red blood cells. When none is available, the meat doesn’t transition.
This is why the burger is pink inside – even when cooked welldone. The meat is perfectly safe to eat – also for pregnant persons.
