Robin Alexandersen opened BOBS in 2023 after years running acclaimed Copenhagen venues — trained at the Danish Hotel- og Restaurantskolen, with stints at Tapasbaren and BØF steakhouse before that. He applies the same chef's discipline here that he learned in professional kitchens: no shortcuts, no processed substitutes, just honest technique applied to honest food. Every burger that leaves this kitchen is built from scratch by a trained chef who genuinely cares about what goes into it.

Every patty is formed from locally sourced beef — over 20% fat, from our Copenhagen butcher — seasoned with garlic, rosemary, and beef stock, then sous vide at 54.5°C for three hours before it hits the grill. The pickles are homemade. The ketchup comes from Bornholm. The brioche buns are organic, baked by Jalm&B in Kastrup. Every sauce is made in-house. If you want canned pickles and frozen patties, you know where to find them — if you want locally sourced ingredients and real culinary technique, this is the place.

The meat is ridiculously tender, and the fries have achieved an elite level of crispiness that should honestly be studied in a lab. The staff is so genuinely friendly and accommodating, you’ll start wondering if they mistake every customer for a favorite regular. The dining space is definitely on the ultra-compact side - think "elbow distance to your neighbor" - but it pulls off the cozy, intimate vibe brilliantly. 10/10 comfort food!

I'm surprised I haven't reviewed before, as this has become a bit of a staple most times I visit Copenhagen. Friendly service, even near to closing time, a deliciously juicy burger. Would definitely recommend.

Vi gik ind som almindelige mennesker og kom ud som oplyste væsener, der nu måler tid i “før Bobs” og “efter Bobs”. Bøffen var så saftig, at vi overvejer at sende en takke-mail til koen. Pomfritterne? Sprøde nok til at helbrede en mindre eksistentiel krise. 5 stjerner, fordi vi ikke kan give 500.
